Moist and Delicious Strawberry Coconut Paleo Scones

Breakfast is one of my favorite meals. Why? Because it is so versatile.
Sometimes we enjoy a savory Frittata, other times it is just fresh farm eggs, natural sausages, sautéed spinach, and toast. Sometimes it is a green smoothie or Shakeology with added fruit and greens. My boys lately are just loving Banana Pancakes topped with Fage greek yogurt (full fat), berries and a tsp of real maple syrup. We also love grab and go Pumpkin, Chocolate Banana, or Apple Muffins, pared with scrambles eggs for extra protein. The options for a delicious and nutritious breakfast are endless!
This is why I am so excited about my latest creation…. Strawberry Coconut Paleo Scones! They are kid tested and approved, deliciously moist and easy to make and perfect to make ahead for an easy to grab breakfast… or enjoy for an afternoon tea! I hope you enjoy them as much as we do!
Strawberry Coconut Paleo Scones
Ingredients
2 Cups almond flour/meal
2 Tbs Coconut flour
1/4 cup unsweetened coconut (optional)
1 tsp baking soda
1/4 tsp sea salt
1 egg
1/4 c. almond milk
1 cup Strawberries
1/4 cup raw honey
When I started making these, I realized I was out of almond flour! Oops! First time making Almond Meal in my vitamix and it worked great! 2 Cups raw almonds = 2 cups almond meal 🙂
Blend Almonds to make the flour, or you can purchase your own!
In two separate bowls mix the wet and dry ingredients together, then combine.
Wash and dry your strawberries. Make sure to buy Organic since they are in the “dirty dozen!”
Chop into small pieces.
Fold gently into the scone mixture.
Lay parchment paper out on a baking sheet. Using your hands, form a circle of the dough.
Slice into eight servings.
The first time I baked these, I burned them. Almond flour can be very touchy! If your oven is hot like mine, cook low and long. I baked mine at 300 for about 25-30 minutes. If your oven runs low, try 325 for about the same time. Check every 10-15 minutes and use a toothpick to check they are thoroughly cooked.
